Dr Ciara Kelly From The Irish Balance|Roasted Cauli Recipe

I’m so excited to be able to introduce you all to Dr Ciara Kelly from the Irish Balance. I have known Ciara through her Instagram Page where she shares her regular food, meal preps, and exercise pictures. 

 

I have been among the many who gets disappointed after their doctors visit as to how little they pay attention to Nutrition and how food can affect your general health.
Every time I see Ciara sharing her pictures it reminds me that the truth always triumphs.
Ciara is living the life she believes in which is focussing on preventative health through Nutrition and health.
Hence, I decided to share her journey with my readers and let them know that food and nutrition are so important and even doctors like Dr Chatterjee and Ciara are proving it to us today.
My favourite line that Ciara uses below is:  I think so much of the information in the media is over-complicated and not sustainable or helpful in the real world.

My name is Ciara, and I’m an Irish girl working and living in Dublin. I’m a qualified medical doctor, and in my third year of practising fully qualified. My passion in medicine, I’ve realised in the past few months, is in the area of preventive medicine, or lifestyle medicine as it’s known by some!
I believe how we live our lives – how we eat, move, sleep, stress and relax – has a huge role to play in our health, in particular, to prevent and help alleviate the burden of many chronic diseases such as diabetes, heart disease, and many others.
I started my blog as a central place for healthy recipes, positive lifestyle messages, and to share my own learning about and journey to balance with the public.
My goal is to help YOU simplify living a healthier life – because I think so much of the information in the media is over-complicated and not sustainable or helpful in the real world. I am also a SERIOUS foodie, and I love to cook!
 
I love to exercise too – my favourite ways to train are HIIT workouts, strength training and running. My other hobbies include reading and time with family and friends.

Spicy Roasted Cauliflower

Ingredients

  • 3 tbsp coconut oil
  • 1/2 tsp sweet paprika
  • 1/2 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tbsp mild curry powder
  • 1/2 large head of cauliflower
  • 2 handfuls of fresh spinach leaves washed
  • Pinch of sea salt and ground black pepper
  • 1 lemon cut into small wedges

Instructions

  1. Pre-heat the oven to 200C (fan oven).
  2. While heating the oven, roughly chop the cauliflower into chunky florets, and place into a large bowl.
  3. Add the spices to a small bowl and give them a quick stir to combine.
  4. When the oven is ready, melt the coconut oil in a bowl in the microwave (usually takes about 1 minute).
  5. Cover the cauliflower chunks in coconut oil, and stir with a spoon so the florets are coated evenly.
  6. Tip the spices over the cauliflower and stir again to coat the florets evenly.
  7. Add the cauliflower to the roasting tray, and place in the oven for approximately 25-30 minutes, until the cauliflower florets are a browned and a little charred at the edges.
  8. Remove from the oven, add the spinach leaves and stir it all again in the tray.
  9. Serve with a lemon wedge to squeeze on top!
