Left Over Turkey
On Christmas day most of us will cook much more than we should. There’s always Turkey and Ham left in the fridge for days and inevitably we’ll even get bored with the food that we took so much time in making.
With just a little creativity we can turn these leftovers into yet another great meal. Like this pulled Turkey salad made in less than 10 or 15 minutes. Obviously you can use turkey, duck or Chicken. It’s great for a light evening meal or brunch. The combination of these few ingredients like yogurt and salad leaves will help the digestive system, it’ll probably need all the help it can get with all the desserts, biscuits and chocolate within arm’s reach.
If you balance your meals, not only will you look after yourself, you’ll keep the mood under control, get good sleep and best of all there won’t be any need for post Christmas Dieting. Save the recipe and come back to it later. There’s busy stressful days ahead with trying to please everyone so please don’t forget to take a step back when you can and connect with yourself.
Take a few minutes for yourself to go out for a walk or get some breathing space whatever way you can. Look after you inside and out. Pulled Turkey Salad
Total Time: 15 minutes
Number of servings: 2
Ingredients
1 cup pulled Chicken
1-2 table spoon natural Greek yogurt
1/2 tea spoon of cloves
1/2 tea spoon of cinnamon
Salt and pepper to taste
2 cups of rocket leaves or any other salad leaves of choice
1 table spoon or more of lemon juice
Instructions
- Mix all ingredients and in a salad bowl and serve
