 Hot carrot and coriander soup, have you ever thought how we can carrots in abundance? Yes I believe so. Sometimes we get a little bored with this nutritious vegetable as it’s available all year round. Though there are so much we can do with carrot. From halwa to soup, salads, cake and so much more am sure. For today as winter is full on here, I thought I’ll make something to give us a little bit more heat. Hot carrot and coriander soup but you can always adjust the heat to your taste and remember all chilies doesn’t have the same amount of hotness. Have the soup with a roast chicken or with crusty bread and it will fill you up and keep you warm . Have you any winter recipes?
 

Hot Carrot and Coriander Soup

Hot Carrot and Coriander Soup

Ingredients

7-8 Carrots

1 Onion finely chopped

3 Cloves of garlic- crushed

2 green chilli

1tsp ground Coriander

Salt to taste

handful Fresh Coriander leaves

2 table spoon of olive oil

1 tbsp of lemon juice

Instructions

  1. Wash,peel and slice the carrots. Heat the oil in a large pot and fry the chopped onions, chilli and garlic then add the carrots and cook for 5 minutes until they start to soften.
  2.  Add the ground coriander and plenty of seasoning and cook for 2 mins.
  3. Add the stock and bring to the boil, cover and simmer until carrots are really tender, add the fresh coriander.
  4. Using a stick blender or a food processor blend the carrots. 
  5. Add the lemon juice and reheat until just hot but not boiling.
