Easy Lemon Chicken

I’m sure you’ve heard of lemon chicken? No doubt you’ve seen it or had it from the Chinese take-away menu? I’d never had it to be honest. This lemon chicken is entirely of my own concoction, I hope you don’t mind if I blow my own trumpet here a bit but yes I am a clever girl when it comes to creating and recreating dishes. Ok. that’s enough ego massaging for now.

We do our weekly shopping on Saturdays. I have a weakness for fresh fruit and vegetables. As far as weaknesses go I guess it’s not the worst. Every Saturday as we enter Lidl to go shopping the first aisle we are presented with is the Fruit and Veg aisle and every week my trolley is already full before I get out of the first aisle. Honestly, I can’t help myself. Fruit and vegetables from all over that I may not even know the name for. No regrets though, it’s all good (except for the part at the checkout when I cringe at the bill).

Every Saturday I’m faced with the same 2 problems when I get home. Where am I going to put all this fruit and veg and what am I actually going to do with it? Smoothies, Salads or Stews? What ever I end up doing with them I know that we need them. One thing that I have to have everyweek is lemon, it’s so good for you. I drink a cup of warm water with a slice of lemon first thing in the morning. Do you? If not I suggest you do because it has so many benefits. Lemon is alkalizing, Detoxifying, a good source of vitamin C. So I cannot not have lemon in my house. When the supermarket has them on offer you could easily find 10 or 15 lemons in my shopping trolley.

Now last week I had the fridge box full of lemons, limes and other citrus fruits. I figured it’s only a matter of time before my husband asks what’s going on with all the citrus fruit and no space in the fridge. I didn’t want to be questioned by him (ego) so I started using whatever I could in almost everything I was cooking. Grapefruit juice dressing, Lime in smoothies  and lemons in the likes of this easy lemon chicken! It came out quite lemony as it happens. Not surprising I suppose. In a tasty, fresh summer flavour sort of way. I also used some lemon thyme which I grow  in my own garden. It releases a beautiful smell of sweet lemon and thyme.

Lemon thyme brings  warmth and fragrance to a dish. Try baking loaves or scones with it.  It’s not zingy like lemon so don’t be afraid of using lemon and lemon thyme together. Now don’t skip the recipe if you don’t have lemon thyme. Use normal thyme or no thyme at all.

Easy Lemon Chicken

Prep Time: 10 minutes

Cook Time: 45 minutes

Number of servings: 5

Per Serving 748 calories

Fat 55 g

Carbs 4 g

Easy Lemon Chicken


5 Chicken Legs

2 lemons

3 cloves of garlic crushed

2 inch ginger crushed

1 tea spoon of paprika

Salt and Pepper to taste

2 Sprigs of Lemon Thyme


  1. Preheat the oven at 180C
  2. Juice 1 of the lemon
  3. Make a paste with the ginger, garlic, lemon thyme, paprika, salt and pepper and the lemon juice.
  4. Rub the paste all over the chicken
  5. Place the chicken legs on an-proof dish.
  6. Cut the other lemon and place them on top of the chicken.
  7. Bake for till chicken reaches 165F (about 45mins) depending the size of the legs


The cooking time varies on the size of the chicken. Cooked chicken temperature should be 165F
