Chia Seeds Scrambled Eggs

Chia seeds scrambled eggs were created last week after I received a surprised hamper from the,  it was a gesture of appreciation as I participated in the Vegetarian week challenge last month. I made a tandoori scrambled tofu and a matcha pancakes for them. I had such fun.

The hamper I received was loaded with Chiabia products, including whole chia seeds, milled chia with blueberry, several individual chia seeds sachets perfect for the bags. I also received some Chia bars with nuts, seeds and fruits. The Chia bars were a little too sweet for my liking, though. However, I was super delighted to get the Cooking with Chia for Dummies recipe book.

I use chia seeds every single day in my porridge or smoothies and having that book made sense where I could use it more now and because I encourage healthy fats daily. The book has so many easy to make everyday recipes using chia seeds. Why did I limit my Chia consumption with only porridge and smoothies so far I have no clue but better late than never.

So the first recipe I tried is a Chia seed scrambled egg which took me literally under 15 minutes. I made it together with the kids, and they were happy with the result and waiting to do it all over again.

Chia Seeds Scrambled Eggs

Number of servings: 2

Per Serving 221 calories

Fat 18 g

Carbs 3 g

Protein 14 g


Chia Seeds Scrambled Eggs


4 eggs

2 tea spoons of milled chia seeds

4 table spoons of milk

1 table spoon of coconut oil

Pinch of turmeric

Salt and pepper to taste


  1. In a large bowl, break the eggs and add the milk, chia, turmeric, salt and pepper. Whisk the egg till the whites and yolks are mixed.
  2. In a saucepan, place the coconut oil then add the eggs.
  3. Stir over low heat until the eggs are soft and creamy (about 5 minutes).
