I remember a few years ago, just before Christmas I was at Dublin City Center.  It’s been few years since I moved away from there. I love going back whenever I can. Cashew Nuts and Goji Berries Protein Balls| Good Healthy Food

Prep Time: 20 minutes

Yield: 20

Cashew Nuts and Goji Berries Protein Balls| Good Healthy Food


  • 20 - 25 dry dates soaked in boiling water for about 10 minutes
  • 1 cup of whole cashew
  • 1 cup of oats
  • 1/2 cup of dry goji berries
  • Juice of 1 lemon


  1. Put the dates to soak in boiling water while you get on with the rest.
  2. Use a high speed food processor to blitz the oats, goji berries and cashew into a coarse powder. Carefully drain the dates and add it to the the food processor along with the lemon juice.
  3. Pulse once again till a dough is formed.
  4. Roll out about 20 golf size balls and there you have it ready to indulge!


You can flattened the dough once it's ready on a flat baking tray and set it in the fridge for about 1 hour then cut them into protein bar shapes instead of rolling them in balls.
