Barley Soup

Ingredients

250g of Soup Mix with barley and some other pulsed

1 tbsp vegetable oil

3 Parsnips

3 Carrots

1 white onion

Celery

Organic vegetable stock cube

Sprigs of thyme

Sprigs of Parsley

Instructions

  1. Soak the pulses for  couple of hours.
  2. Chop all the vegetable in small cubes.
  3. In a big pot heat some oil, add the chopped onions and cook for 2 mins. Then add the rest of the ingredients and cook for another 5 mins. Add in the chicken stock.
  4. Allow to simmer for about 2 hrs in a low heat adding more water if needed.
  5. Season and serve hot.
