Baked Baby Potatoes and Runner Beans

Are you getting ready to treat your mammy for Mother’s Day? What would you planning? Is it cooking a meal for her or taking her out? If you are planning a meal make sure you don’t over do it. Save some time to talk to her. There’s nothing a woman wants more than a good listener. Reduce the work load but still get the flavours in and make the person who brought you to life feel special and pampered. And if you are a mother reading this I wish you a very Happy Mother’s Day. Take a step back and be pampered on this day.

Back to the potato recipe. I haven’t met anybody not liking potatoes. Big people or small we all cherish this humble potato. There’re so many ways of cooking or eating it. Back home we eat potatoes with rice or roti so it’s a must have veg in the house. Put in curries or salads. I use to love frying baby potatoes with chilies, fenugreek seeds and onions in a bucket of oil. Ah those crispy and salty treats!. I also sautee potatoes with beans, peas, mushrooms, spinach, you name it.

These days though there’s no frying around here and I prefer to put everything in a baking tray and stick it in the oven and the job gets done. One good thing being a mother of 4 has taught me is definitely to organise myself better and cut the work whenever possible. I’ll call it being mindful and kind to myself and those around me. You see I cook every single day and I love cooking but there are times I resent it too. So simplifying the task is the way to go for me. This is a fantastic recipe very tasty which will surprise your taste buds. It’s flavourful, crispy and a very good side dish to have. 

Baked Baby Potatoes and Runner Beans

Prep Time: 10 minutes

Cook Time: 40 minutes

Number of servings: 6

Per Serving 272 calories

Fat 4 g

Carbs 49 g

Protein 13 g


Baked Baby Potatoes and Runner Beans


500g baby potatoes wash and cut into rondelles

300g runner beans wash and cut to 2-3 inches long

2 plum tomatoes chopped

2 red chilies (optional) chopped

1 large white onion chopped roughly

1 table spoon of coconut oil

Salt & Pepper to taste


  1. Preheat the oven at 180C.
  2. Add all the ingredients EXCEPT the runner beans into a baking dish.
  3. Mix thoroughly and bake for about 20 minutes.
  4. Remove the tray from the oven then add the runner beans. Mix all.
  5. Bake for another 15-20 minutes or till the potatoes are cooked.
  6. Serve!
