Sweet Potato Wedges

Sweet potato wedges skin on is another favorite in my household. From big people to my 9 months baby. When I make it has to be in a big quantity, 2 kg in this case! Some was left but it will be happily eaten for lunch or as a snack. As a mother of 4 I love to see how my children are enjoying food that is whole and full of nutrients of which sweet potato has endless quantities. And it is so cheap to buy. I paid less that €1.50 for a kg in LIDL. I made it with the skin on here which again saves the time peeling as it can be time-consuming. Having the skin on gives texture and more nutrition on your plate such as fiber and potassium. Also, baking them is a better than boiling. Boiling can cause water-soluble nutrients to be lost. 

Sweet potatoes are a great source of vitamin A. Vitamin A is important for keeping your eyes and skin healthy. Since vitamin A is a fat soluble vitamin, adding some healthy fat such as olive oil can help you absorb more vitamin A, or better still, coconut oil as I did in mine brings a slight nutty flavor. How To Roast Perfect Sweet Potato Wedges

How To Roast Perfect Sweet Potato Wedges

Ingredients

2 kgs of medium size sweet potatoes skin on

2 table spoons of extra virgin coconut oil

1/2 tea spoon of sea salt

Instructions

  1. Soak the sweet potatoes in water (helps the dirt come off)
  2. Use a vegetable scrubbing brush to scrub the sweet potatoes clean
  3. Pat them dry
  4. Use a chopping board
  5. Cut the sweet potatoes in 4 lengthwise
  6. Put all in a bit mixing bowl
  7. Add the salt and coconut oil
  8. Mix or flip to help all mix through
  9. Place each of the sweet potatoes gently on baking trays ( I used 3 baking trays)
  10. Bake in a preheated oven at at 200C for 35-40 minutes
