Hello there friends! I am super excited to share this recipe with you today! I had so much fun making it because it was an easy and#healthytreat. You probably already know that we are trying to avoid buying bread from the shop and we have started to make our own sourdough bread, yay!! not any other bread but sourdough. I haven’t shared the recipe on the blog yet because I need a little more practice.
If you never had sourdough then you are missing out. With sourdough you won’t have to feel guilty about eating a slice of bread because this is the real deal. It is actually good for you bread. Tasty, tangy and the smell is just unbelievable (in a good way). It is how bread was made in the olden days.
If this is not enough to convince you then Sourdough has only 3 ingredients which is flour, water and salt. The other unnatural ingredients that commercially produced bread include isn’t there.
The sourdough bacteria predigests the flour which releases micronutrients. This process takes place over a long slow fermentation. I will cover all about sourdough in a different posts. I used Spelt flour for my sourdough starter and the bread itself. This is the flour I use and it is also much better than refined flour. Read about spelt flour here
Yeah so I had this stale healthy bread which I knew was still healthy and I just didn’t want to throw it out. Then I saw a version of this recipe on tasty the same morning and I thought I’d give it a go. It was fairly easy and simple. In case the recipe fails? all I had to lose was a few eggs, couple of bananas and my time. I was alright with that as long as I didn’t have to throw my so precious bread. The recipe took me about 45 minutes from prep to finish.
This 4 ingredients Sugar and Dairy Free Sourdough Bread and Banana Pudding turned out to be quite delightful. So much that the whole thing you see on the picture was gone by the evening. Considering the tough piece of stale bread that was used, no sugar or honey to sweeten it and my young kids, teenager and husband all loved it and wanted me to make it again.
- 500g stale sourdough bread
- 4 large bananas
- 3 small or 4 large eggs
- 1/3 cup of cacao nibs
- Preheat the oven at 180C
- Slice the bread and break them into small pieces. Leave aside.
- Peel the bananas and put them in a mixing bowl.
- Use a fork to mash the bananas
- Add the eggs and beat.
- Add the cacao nibs and mix all.
- Add the bread pieces and mix all again.
- Grease a small baking tray
- Tip the mixture on top of the tray and bake in a preheated oven at 180C for 30 minutes
- Cut into small pieces and serve
