Shredded Beef Casserole

The weather in Ireland has been strange, it is officially Spring yet so cold. In such weather a hot stew or spicy food is always welcome. The distinctive flavour of cloves in this recipe is the star. It brings warmth and depth to the whole dish and of course it’s another way of using some beneficial spices. Some of the benefits of clove is that it aids in digestion, helps control blood sugar, boosts immune system and provides relief from inflammation and pain. Here are some more benefits to cloves.

The pictures may not look very inviting but I promise it is one homely, delicious and nutritious meal that is so so easy to make. Writing a food blog or maintaining a blog sometimes requires more than I first anticipated. There’s a bit of planning ahead, a bit of recipe testing, lots of dirty dishes and some good intentions. Doing all that while minding kids, studying and all that weighs heavy at times. Having said all that I love it! I love every bits of it. The cooking, the eating, the pictures, the writing, editing and much more. Plus there is the creative self that comes out. We are always searching for inspirations.

A perfect example is this recipe, it wasn’t supposed to be published as I was having one of the crappiest day. Day like that nothing gets done. There are way too many things to take care of. Some stay at home mam and dad would know what I’m talking about.

Knowing so I thought it would be better if I put something to cook slowly in my dutch oven till dinner. Then that would be one less thing to think about.  I wasn’t expecting much from this dish, just let it be edible. However after tasting the end result I was stunned! It was rich, dark and a gooey perfection.  Versatile to serve with boiled or mash potatoes, with rice or burritos or on it’s own. The slow simmering process is indeed quite rewarding and a great way to end a crappy day!

Shredded Beef Casserole

Ingredients

1 kg beef leg without bone

4 medium size carrots chopped

3 celery sticks chopped

1 leek chopped

1 large white onion chopped

3 cloves of garlic crushed

1 inch ginger crushed

5 plum tomatoes chopped

2 tea spoon of ground gloves

salt and pepper to taste

2 liters of water or more

Instructions

  1. Add all the ingredients in a dutch oven and cook in a preheated oven at 170C for 6 hours.
  2. And serve on a bed of rice or mash potatoes.
