 Sausage, Kale and Butter Bean Warm Salad

I recently came across a version of this recipe on Food52. Sausage, Kale and Butter Bean warm salad which is healthy nutritious and delicious. Did I mention it’s easy to make?

You can replace the sausages with any protein of choice and I bet it will taste as good. Or even replace butter bean for chickpeas. I have made this recipe for breakfast and dinner and both occasions it’s been demolished in no time.
Sausage, Kale and Butter Bean Warm Salad

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 4

Ingredients

  • 408g Pork Sausages
  • 250g Kale cleaned and roughly chopped
  • 1 can Butter Bean
  • 1 onion chopped
  • 3 tomatoes chopped
  • 2 cloves of garlic crushed
  • Salt and pepper to taste
  • 4 tbsp of oil

Instructions

  1. Heat a wok with oil.
  2. Fry the sausages and put them aside on a plate to use later.
  3. Add the chopped onions. Cook for about 3 minutes then add the butter beans.
  4. Season with salt and pepper and cook till butter beans are browned on both sides.
  5. Add the tomatoes and the crushed garlic.
  6. Cook till tomatoes are reduced.
  7. Add the curly kale and cook for about 5-7 minutes.
  8. Add the sausages and mix well.
  9. Serve over a nice piece of bread.
