Red cabbage is another super-food that is affordable and quite nutritious.  It’s a good source of vitamin A, C and K and of essential minerals such as Potassium and Manganese. Red cabbage is  good for eye health, Immune health, good blood regulation, Cell health, blood pressure regulation and metabolism.

Mango is also rich in vitamin A and C but also contains choline, folate, calcium, magnesium, phosphorous and potassium. In addition to eye health and Immune function mango also helps with bone health, cell repair and production, skin and hair health and vitality.

I’m sure you’d agree that all this makes this salad super nutritious. It’s also an easy to make lunch idea. Shredded and packed in different tupperware for a week supply. For a more substantial meal just add some fish, egg or chicken with some potatoes or sweet potatoes and Hey Presto, dinner is served.

Red Cabbage and Mango Slaw

Ingredients

1/2 red cabbage shredded

2 carrots grated

1 mango cut into small cubes

1 red onion grated

2 table spoon of fresh parsley or any other herb of choice

juice of 1 lemon

2-3 table spoons of tahini paste

salt and pepper to taste

Instructions

  1. In a small jar make a dressing using the tahini, lemon juice, salt and pepper. Shake to combine.
  2. Put all the shredded and grated vegetable in a big salad bowl.
  3. Pour the dressing over the salad and mix through just before serving.
