Wheat Free Banana Bread Waffles

I just can’t believe the kids are going back to school this week. . . Summer is over! I remember how I was panicking at the idea of my 4 kids being at home for 8 weeks. Why may you ask?

Well because I knew the kids were going to be home 24/7 and I will have to feed them 6 times a day!

 

In my panic mode, I bought a waffle maker! Cooking is fun but cooking a few times a day and cleaning up afterwards isn’t!

So while looking to make some quick and tasty recipes for the kids I created this oaty waffle recipe. (The best part of food blogging is recipe creating for me) .

Not as light as the one we buy but quite tasty considering we used barley flour which can generally be heavy.  But I have also made these with only oats flour with 2 extra eggs or with just barley flour.

So if you don’t have barley flour use whole porridge oats to make your own flour by simply blitzing it in a high-speed food processor.  Change the flavours you prefer such as cardamon, cacao or cinnamon.

Instructions

  1. Heat the waffle maker while you prepare the batter.
  2. Add all the ingredients in a food processor and pulse.
  3. Use some extra coconut oil to carefully grease the waffle maker
  4. Put about 3/4 cup of the batter into the waffle maker and cook according to the waffle maker instruction.
  5. Repeat until the batter is finished
  6. Serve with your favorite toppings, like yoghurt, jam, maple syrup fruits and nut butter
