OMG! I opened my mail box as soon as I heard bing and it was a post from Budget Bytes . I have been following Beth for over a year now and I adore how simple and budget wise her recipes are. But this one is my favourite! I absolutely love peanut butter and banana sandwiches and so do my children but having it caramelised with cinnamon flavour, amazing! Why did I not think of this? I guess some are wiser than I.
In case you hadn’t noticed from my recent posts, I have turned completely anti-sugar, there’s a blanket ban in our house. I had a dilemma, I wanted to try this recipe but by my own rules I couldn’t caramelise with sugar. I decided to just go ahead and try caramelising the banana without it, ‘couldn’t hurt to try. I sliced the bananas and started cooking them in my small pot and it was cooking and caramelising on it’s own no problem. The only problem when I made it though was that there wasn’t enough of it. We got like 2 slices and I could easily eat 4 more. I also used 100% natural peanut butter so it’s as healthy as it gets.
Prep and cooking only takes about 10 minutes so this no sugar caramelised banana and peanut butter quessadilla is perfect for breakfast, a snack or even dessert. Thank you Budget Byte for leading me to this delicious byte.
No Sugar Caramelized Banana and Peanut Butter Quesadillia
Prep Time: 5 minutes
Cook Time: 10 minutes
Number of servings: 1
1 flat brown bread
1 generous pinch of cinnamon
1 table spoon of organic natural peanut butter
- Slice the banana and put it in a small pot to cook. Keep stirring till the bananas are mostly mashed and cooked for about 5 minutes
- Spread the peanut butter. Top up with the banana mash. Sprinkle a generous amount of cinnamon
- Heat a skillet or grill
- Cook for about 2 minutes on each side or untill it's well toasted.
- Enjoy it as its hot
