Dill Flavored Fish Stew

I got some fresh dill in the shopping this week and I wanted to use it as much as I could before it went off.  Dill is not a herb I am very familiar with but I love everything about it, it’s even pretty to look at.
In the search for recipes using Dill, I came across this dill flavoured fish stew and I thought I’d give it a go. It is a light stew that can be made all year round.
Fish is always good to add to a healthy diet.

Fish Stew

Ingredients

4 Fish Fillets (I used haddock)

175g Potatoes chopped in cubes

1 chopped onion

2 celery sticks chopped

1 can of chopped tomatoes

3 cloves of garlic

2 bay leaves

250ml Vegetable stock

10g chopped Fresh parsley

1 tea spoon cayenne pepper

 10g chopped fresh dill

Juice of 1/2 a lemon

Salt to taste

Instructions

  1. Heat oil in a saucepan. Add onions and celery and cook for about 5 minutes. Add tomatoes, garlic, potatoes and bay leaf, cayenne pepper and cook for 5-7 minutes. Add the vegetable stock and simmer for 10 minutes. 
  2. Add fish, 1/2 of the fresh herbs and simmer until fish is cooked. 
  3. Check seasoning. 
  4. Serve with a good squizze of the lemon and the rest of the chopped herbs.
