Beware of the Irish
When I first came into my Irish husband’s family, they all loved visiting my place for grub. All were like starved children! They were very open about complimenting my food, (more than my family members back home). I felt welcomed. If there was one thing I was confused about was a reference to Mira’s surprises” that kept coming back up.
OR Beware Of My Chilli addiction
A few years in, I found out they were talking about my roughly chopped chilli that they would get as ‘surprises’. I used to add very hot green (de-seeded) chillies into anything I cooked.
Things I had to give up as a Parent = chilli
Since the kids came around, I had to let go of my chilli addiction; I now replace it with veggies. I try to incorporate it in many ways to get the kids eat their portions without too much whining.

Today’s recipe is not only an excellent example of how we can incorporate veggies that more likely is not going to be appreciated by young ones, but it is also a budget friendly (also a favourite topic for parents like me who spend days staring at the 92 cents left in their online banking app). As if something magical is going to happen and change things around 🙁
A week worth of Lunch Box
As a parent, I also try to use my time sparingly. If I do not have to do it again, I will not!
This Cumin flavoured Beetroot and Beef mince burger keeps well in the fridge for a couple of days too, it makes it a perfect lunch box idea. Yay!! Make it on a Sunday and use it all week. It still is tasty cold.
Bulk Up Dinners
This healthy burger was created the first time when my beetroots were dying in the fridge, I was in a rush to make dinner, and I was fed up cooking so I decided to bulk up my beef mince tray so I can get two dinners out of it! Adding beans and the freshly grated beetroots make that happens.
Keep It wholesome
I also added some nutritious pumpkin seeds and oat flour. It’s an earthy and nutty burger. I then served it with some sweet potato wedges and a fresh salad, and it works so well together. I like how this recipe incorporates the goodness from the beetroot, and no child was complaining about the taste or texture let me tell you.
- 400g of Mince Beef
- 4 small beetroot (grated)
- 2 cans of Butter Beans
- 1/3 cup of pumpkin seeds
- 1/3 cup of oat flour
- 1/2 cup of freshly chopped coriander
- 1 table spoon of coconut oil
- 1 tea spoon of cumin powder
- 1 tea spoon cayenne pepper
- Preheat the oven at 200 C. Line a baking tray with parchment paper.
- Use a big bowl to mash the butter beans with a potato masher.
- Add the rest of the ingredient and mix all of the it. Try NOT to over work the mixture.
- Divide the mixture in around 20 burger shapes.
- Place in the line baking tray and bake for 25-30 minutes.
- Serve with a fresh salad or with buns.
Now I know September is just outside the door and we are thinking of Easy Peasy Lunch Ideas again. I have gathered a few of my favourite Lunch Ideas below. Some of the recipes were created for adults so mind the chilli ‘surprises’. Skip the chilli or make it for you! With the pancakes, add in a few fruits and veg sticks, tahini or hummus on the side.
