BEAUTY INSIDE OUT
I remember a few years ago, just before Christmas I was at Dublin City Center. It’s been few years since I moved away from there. I love going back whenever I can. After being home with young kids all week I like getting out on Saturdays to have some me time. With all good intentions, it doesn’t happen too often. So the kids were home with the husband. After a movie and hot chocolate, I decided to take a walk to the clothes shops. That what woman do right?
As usual, there were those perfect skinny Jeans with bright coloured slim coats were on display. I felt the urge to try some. I didn’t know what size I was like I hadn’t bought clothes for a while. The maternity Jeans were still being used.
I carefully selected a few sets and brought them to the changing room to try them on. That day, I had the most horrible experience of my life. I was looking at my body in the mirror and felt nothing but hatred for myself. I was shocked at how far I let myself go.
TIME FOR CHANGE
I felt sick and nauseous so see that none of the clothes was sitting right on my body. I broke down and started crying in the changing room. Negativity filled my thoughts and I felt a sense of resentment toward everything in life. See I have always been a skinny girl before having the kids. - 20 - 25 dry dates soaked in boiling water for about 10 minutes
- 1 cup of whole cashew
- 1 cup of oats
- 1/2 cup of dry goji berries
- Juice of 1 lemon
- Put the dates to soak in boiling water while you get on with the rest.
- Use a high speed food processor to blitz the oats, goji berries and cashew into a coarse powder. Carefully drain the dates and add it to the the food processor along with the lemon juice.
- Pulse once again till a dough is formed.
- Roll out about 20 golf size balls and there you have it ready to indulge!
You can flattened the dough once it's ready on a flat baking tray and set it in the fridge for about 1 hour then cut them into protein bar shapes instead of rolling them in balls.
