Adzuki Beans, Squash and Kale-winter warmer

A perfect winter warmer.  Adzuki, squash and kale are the perfect ingredients to bring warmth and comfort to the body and mind. The reddish brown adzuki beans are high in fiber and protein and are famous for being used in the Japanese dessert. Due to the high concentration of soluble fiber in adzuki beans they are great for stabilizing and even eliminating cholesterol, they’re also great for eliminating toxins. There are endless health benefits to eating these little gems.  In this dish you get the sweetness from the squash and the crunchiness from the kale. The soy sauce just ties it all together to give the dish the saltiness you desire.

Adzuki Beans, Squash and Kale-winter warmer

Ingredients
  • 1 cup dry Adzuki beans (soaked overnight)
  • 1 small butternut squash cubed
  • 5-6 kale leaves roughly shredded
  • 2 cloves of garlic crushed
  • 1/2 an onion chopped
  • 2 tbsp of dark soy sauce
  • Parmesan cheese garnish (optional)
Instructions
  1. Soak the Adzuki beans overnight.
  2. Wash the beans under cold running water.
  3. Put the beans to boil in a pot or pressure cooked.
  4. The beans should be ready when you can squeeze them between fingers.
  5. when the beans are ready crushed garlic, onions, soy sauce and the butternut squash.
  6. Simmer till squash is cooked.
  7. Add kale and cook until wilted, about 5 minutes.
  8. You can garnish with some grated parmesan cheese before serving.
